The recipe for smoked salmon, avocado, and arugula salad makes for a great snack and only takes ten minutes total to prepare!

Eruca sativa is an edible annual plant, commonly known as salad rocket, rucola, rucoli, rugula, colewort, roquette, and arugula.

Arugula, also known as rocket and rucola, is a less recognized cruciferous vegetable that provides many of the same benefits as the notoriously nutritious better-known vegetables in the cruciferous family such as broccoli, kale and Brussels sprouts. Arugula leaves are tender and bite-sized with a bit of a tangy flavor.

Along with other leafy greens, arugula contains very high nitrate levels (more than 250 mg/100 g). High intakes of dietary nitrate have been shown to lower blood pressure, reduce the amount of oxygen needed during exercise and enhance athletic performance.

Here is what you will need:


arugula lettuce

2 avocado

1 lebanese cucumber

4 servings smoked salmon

2 tbsp sesame seeds

1 lime; juiced

4 tablespoons Extra virgin olive oil

1 drop sesame oil; optional
