Chicken Cacciatore
Chicken Cacciatore recipe:
Cacciatore means “hunter” in Italian. In cuisine, alla cacciatora refers to a meal prepared “hunter-style” with onions, herbs, usually tomatoes, often bell peppers, and sometimes wine. Cacciatore is popularly made with braised chicken or rabbit.
It’s a simple combination of flavours that just works really well. Cacciatore means ‘hunter’, so this is obviously the type of food that a hunter’s wife cooks for her fella when he gets home from a hard morning spent in the countryside. This is also a great dish for big parties, as it looks after itself in the oven.

2 1/2 pounds/ 1.13kg Chicken; (breast halves, thighs and drumsticks)
1 1/2 cups Mushrooms; sliced fresh
1 each Onion; (medium) sliced
1 clove Garlic; minced
14 1/2 once/0.41 kgs Diced tomatoes; undrained
6 once/17g Tomato paste
3/4 cup Dry white wine
1 teaspoon Sugar
1/2 teaspoon Salt
1/2 teaspoon Rosemary; dried, crushed
1/2 teaspoon Thyme; dried, crushed
1/4 teaspoon Oregano; dried, crushed
1/8 teaspoon Black pepper
1 tablespoon Parsley; snipped fresh
Fettuccine or Liguine; cooked
