Morel: Morchella, the true morels, is a genus of edible mushrooms closely related to anatomically simpler cup fungi. These distinctive fungi appear honeycomb-like, with their cap composed of a network of ridges with pits.
Morel mushrooms consist of several B-vitamins and health promoting minerals. Studies have revealed that Morel mushrooms reduce the risk of cancer as they contain a high level of niacin and selenium. Also, the superior vitamins and mineral content, low calories and fat content make it an ideal food for weight loss.

1 tb fresh marjoram; Chopped
1 ts Butter; and olive oil
1 snow peas; & sugar peas, trimmed
2 Green onions; thinly sliced
3 oz morels, fresh; or other mushrooms if morel is unavailable.
1 lb Asparagus; peeled, trimmed
black pepper; Freshly ground
1 lb Farfalle, cooked
1/4 c Grated Parmesan; fresh
1/2 Shallot; minced
1 c green peas, fresh
1/4 c Vegetable broth; or water
1/4 ts Salt; or to taste
