Quinoa is a species of the goosefoot genus, a grain crop grown primarily for its edible seeds. It is a pseudocereal, similar in some respects to buckwheat, rather than a true cereal, as it is not a member of the true grass family.
Edamame or edamame bean is a preparation of immature soybeans in the pod, found in the cuisine of China, Japan, Korea and Hawaii. The pods are boiled or steamed and served with salt.
Here is what you will need:
Ingredients:
1/4 Cup White wine vinegar
1 clove Fresh garlic, peeled
2 tablespoons Fresh oregano; finely chopped
1/4 cup Extra virgin olive oil
1/4 teaspoon salt
Freshly ground pepper
2 cups edamame; cooked and shelled
3 cups quinoa; cooked
2/3 cups sun dried tomatoes; thinly sliced
1/2 cup red onion diced
1/2 cup kalamata olives; halved
1/2 cup Feta cheese; crumbled
